THE ADVICE OF THE DAY…

If ever you make your own spice blends (why not!), alway use whole ingredients. And if possible, toast them before. This way, you will increase by far their aromatic potential.

Ethiopian Berbéré : A typical north african blend. Although rather spicy, it’s a real all-purpose mix.

Containing more than ten differents spices, all of them toasted beforehand, we may use it in couscous, with nodles, in sauces and, f course, in a soup.
