How to make a turkey even more delicious and even more delicate on the palate? By letting it marinate, of course. But not in any old way! With spices, obviously. Indeed, nothing better than marinated spices to make you wants seconds to any fowl, specially turkey.
A recipe? The one we propose you will be enough for a 4-kilos turkey (about 9 pounds), but you may set it to your convenience.
¼ c. of whole black pepper
¼ c. of whole allspice
3 tbsp for yellow mustard seeds
2 cinnamon sticks
1 tbsp of caraway
4 stars anise
1 tsp of whole cloves
1 c. of coarse salt (optional)
Pour enough water in a container to immerse the turkey and add the spices. Bring to a boil. Lower the heat and let the spices to be diffused in the water for about 15 to 20 minutes. Let cool.
Immerse the turkey in the cool brine and put in fridge for about 12 hours.
